Vegan yummy & healthy breakfast porridge

Especially in winter time (whenever it’s cold basically), I love to start my day with yoga (obviously) and then a scrumptious, easy to prepare, filling & warm breakfast. This porridge recipe gives you enough energy until lunchtime ! It’s also very nice to combine with an organic vegetable juice, made with your own juicer 🙂

Organic ingredients

Non-dairy milk of choice (preferably unsweetened) or mix of water & non-dairy milk
Some type pf oats (I live in Belgium so buy mostly from Colruyt the flocons d’avoine/ havermout Biotime)
Chia seeds or ground flax seeds (omega 3)
Raisins (low G-I sweetener)
Half an apple or banana
Some sunflower or pumpkin seeds
Mesquite or maca powder (optional)
Cinnamon or shredded coconut (optional)

Preparation

Cinnamon-Porridge-with-Nuts-and-Dried-Fruits-500Bring the non-dairy milk to its boiling point, add the oats, bring it again to boiling point & let it simmer for a  minute or 2 before turning off the gas. (I use 1 cup of oats on 2 cups of plant-based milk). Put a lid on the pan (I love my non-toxic, non-sticky Greenpans) and leave it to stiffen and cool down for a couple of minutes. Add the porridge to a bowl in which all the other ingredients are mixed together. Mix it all & eat it directly while still lukewarm.

You can vary with the fruits & dried fruits depending on what’s in season & what you have at home (i.e. replace the raisins with goji berries, dried dates, apricots or cranberries).

TIP: what’s extra nice is to add some almond or coconut (or other nutbutter) butter in there, let it melt, mmmmh !

  1. This is my kind of breakfast too. I love it! I also love to use Gf oats, wholesome quinoa flakes or rice flakes, etc. I can find mine in the Bioplanet. they have a biolplanet in Dilbeek! 🙂
