Tofu, spinach & green peas sauce w/ pasta Ⓥ

20160516_190843Sometimes you come home to a nearly empty fridge or fresh produce, but to lots of ingredients in your freezer/ pantry. Then this dish is easy to whip up in about 30 minutes.

Ingredients (4P)

  • A block of firm tofu, about 400 grams
  • 200 ml of soy cream
  • 2 tbsp soy sauce (I used organic tamari)
  • 2 tsp turmeric powder
  • 1 tsp asafetida powder
  • Black pepper
  • 2 tbsp nutritional yeast
  • 0,5 tsp chili powder
  • 250g frozen spinach
  • 150g frozen green peas
  • Pasta of your choice (about 75g pp)
  • Coconut oil

Preparation

  1. Squeeze the excess water from the tofu above the sink.
  2. Cut the tofu into bite size cubes.
  3. Season the tofu cubes with the soy sauce, turmeric, asafetida, black pepper & chili powder coating all cubes evenly. Set aside.
  4. Heat up water for the pasta.
  5. Heat up oil in a frying pan or wok and add the seasoned tofu cubes. Stir fry for about 8-10 until golden.
  6. Cook the pasta according to directions.
  7. Add spinach until cooked.
  8. Add green peas.
  9. Add soy cream and stir well.
  10. Stir in nutritional yeast.
  11. Drain the pasta and quickly add some cold water to stop cooking process.
  12. Add the pasta to the sauce and mix well.
  13. Season with salt & black pepper to taste.

Join the Brussels Yoga Mala 2016

BYM_2011Join the Brussels’ yoga community in celebrating the Summer on Sunday 5 June 2016 with the 7th edition of the Brussels Yoga Mala!

 What is the Yoga Mala? – it’s a yoga event for all the family taking place in Brussels around the time of the summer solstice where we celebrate life and practice 108 Sun Salutations, kids have their own yoga party, and we raise money for charity. This year we are supporting the Community Support for Refugees group.

108 sun salutations? you must be joking, I can only do 8 before I need a rest in savasana! – no problem, whether you do 8 or 108 we will complete the mala together, the last 6 Malas have seen over 100 women, men and children coming together to make one sunny circle 🙂

There will be at least 10 yoga teachers leading the rounds, including me.

Where is it and when? – it’s on the mezzanine in Autoworld Museum, Park Cinquantenaire in Brussels, and we start at 10h30 on Sunday 5 June. We usually finish around midday.

How do I register and how much is it? – to register please send an email, and make a payment of €2 entrance fee plus a donation for charity (we suggest €10 put please give what you can) into the bank account: BE85 0357 3874 8506.

5 day early morning yoga challenge in May ’16

Sampoorna photo Aug 2013 (4)It’s Spring & in the Sampoorna Yoga Studio we celebrate that wonderful event with the now famous 5 day early morning yoga challenge.

Let this week be your inspiration to a daily morning practice! Get up early and start your day with yoga and a nourishing vegan breakfast!

On five consecutive mornings we meet up before work and duties for a full practice of hatha yoga. There’s no better way to start the day!

 Price: 50€ for the 5 classes (or you can use your regular pass). Free vegan breakfast included!

Dates: 23-27 May 2016 from 7 to 8AM, followed by a filling vegan breakfast
