Ginger infused, stir fried buckwheat noodles, broccoli & Swiss chard Ⓥ

20170222_203356Last night I wanted to eat something healthy & light, but warm, as it’s still cold & rainy weather. I made a quick & dirty noodles dish that was simply delicious.

Ingredients (3 servings)

Preparation

  1. Boil a pan with water for the noodles. Cook following the instructions (not too long!).
  2. Cut the broccoli in florets, wash. Put in a pan with just enough cold water to not cover the florets, add a pinch of salt & put on the stove to boil. Once boiling, let them simmer for a few minutes (max. 5), drain & rinse with cold water.
  3. Cut the stem & leaves of the Swiss chard, wash and set aside.
  4. Peel & slice the garlic and ginger.
  5. Heat sesame oil in a skillet or wok, add the ginger, stir fry for 2 minutes; add the Swiss chard, stir fry for 3-5 minutes; add the garlic, stir fry for 1 minute; add the broccoli & mix it all together. Add a few tablespoons of the tamari, some salt & black pepper to taste; add the noodles and mix it all together. Add more tamari & sesame oil if necessary.
  6. Serve in a bowl with some kimchi on top.

Use any vegetable you like according to the season or what you have in your fridge or freezer. Alway lightly blanching the hard vegetables before stir frying them.

You can add a source of protein such a mock meat, TVP or tofu. Season & stir fry it separately before adding it to the noodles.

Yoga video tutorial for shoulderstand & plough poses

After the headstand comes Sarvangasana (Sanskrit: सर्वाङ्गासन), the Sanskrit name for the shoulderstand, comes from the word “sarva”, meaning whole. This asana strengthens your entire body; it gives many of the benefits of the Headstand, but here the circulation is directed to your thyroid gland instead of the head and it gives a great stimulation to your metabolism. It’s an inverted pose, with your body resting on your shoulders.

Check out the step by step asana on this page.

A new yoga asana tutorial video available on my YouTube channel

Slowly, but surely I’m taking the time to add voiceover to my yoga videos. Today I’ve uploaded a new asana: Matsyasana or fish pose.

You’ll find more info about the pose on the dedicated page.

My favorite meditation App

screen-shot-2017-02-15-at-15-55-46It sounds counter intuitive: using an App to meditate, but for some it is the tool that really helps to sit and do ‘it’ regularly.

My favorite App for meditation is by far: Insight Timer for Android & Apple phones.

There’s a free and a paid version (not expensive, less than 5€). The advantage of the paid version is that your phone goes on mute during your meditation, so you won’t be disturbed, which I find fabulous.

You can choose to meditate in silence and simply use the App to set the desired timing for your practice, as well as choose how to inform you’re ‘done’: by sounding 1, 2 or 3 bells (different types are possible). You can also use guided meditations and there are thousands, in several languages and for every occasion: I love the yoga for sleep and yoga breathing.

Options: you can keep track of your achievements and connect with other meditators or friends around the world.

So give it a try and kickstart your meditation practice. Once you get the hang of it, you’ll see how it’ll change your day, as it really helps to focus more and be less distracted (my experience).
